Apple and Oat Energy Balls
1 cup of Allen’s apple juice
½ cup dried cranberries
½ cup dried apples, chopped or diced
½ cup of dark chocolate or milk chocolate chips
2 ½ cups quick cooking oat flakes
½ cup pumpkin seeds
½ to ¾ cup of grated coconut

In large bowl, combine oatmeal and apple juice

Add all the other ingredients except the coconut and mix well.

Place the coconut on a plate.

Form small balls of about 1 tbsp. soup with the oatmeal mixture and roll in the coconut

Keeps in the fridge for 1 week and tolerates freezing
