Apple Breakfast Tacos
- 3 large tortillas
- ¼ cup brown sugar
- 1 tsp cinnamon
- Oil of choice for cooking
- Greek yogurt, cream cheese, jams, nut butter...
- Apple Cinnamon Topping
- Crumbled nuts, shredded coconut, chocolate chips...

Preheat oven to 350°F (180°C) and have a muffin tin handy.

Using a circle cutter or knife, cut out 3 smaller circles from each large tortilla.

In a small bowl, mix together the brown sugar and cinnamon.

Dip tortillas in oil, then cover with brown sugar and cinnamon mixture.

Place muffin tins upside down, then insert tortilla between 2 slots to form a taco. Repeat.

Bake for 10 minutes or until tortillas are crisp.
