Ingredients

For the cookies:

  • 3 cups flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 ½ tsp cinnamon
  • ½ tsp ground ginger
  • ½ tsp nutmeg
  • ½ tsp salt
  • ½ cup butter, softened
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 2 tbsp vegetable oil
  • ¾ cup apple sauce
  • 1 tsp vanilla extract
  • 200 mL apple juice

For the glaze:

  • ¾ cup softened butter
  • 4 cups powdered sugar
  • ½ tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/8 tsp ginger
  • 3 tbsp apple juice
  • 1 tsp. vanilla extract
  • 1 pinch of salt

Directions

  1. For the cookies:

    • Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.
    • In a medium bowl, combine all dry ingredients, set aside.
    • In a large bowl, beat butter with brown sugar and white sugar.
    • Stir in vegetable oil, applesauce, vanilla extract and apple juice.
    • With a spatula, gradually add the dry ingredient mixture to the wet ingredient mixture.
    • Divide the dough among the balls on the cookie sheet, making sure to space them out.
    • Bake for 12 to 15 minutes and refrigerate.
  2. For the frosting:

    • In a large bowl, whisk butter with confectioners’ sugar then stir in remaining ingredients.
    • Spread a small amount between two cookies and enjoy!
