Ingredients
For the cookies:
- 3 cups flour
- 1 tsp baking powder
- ½ tsp baking soda
- 1 ½ tsp cinnamon
- ½ tsp ground ginger
- ½ tsp nutmeg
- ½ tsp salt
- ½ cup butter, softened
- ¾ cup granulated sugar
- ¼ cup brown sugar
- 2 tbsp vegetable oil
- ¾ cup apple sauce
- 1 tsp vanilla extract
- 200 mL apple juice
For the glaze:
- ¾ cup softened butter
- 4 cups powdered sugar
- ½ tsp cinnamon
- 1/8 tsp nutmeg
- 1/8 tsp ginger
- 3 tbsp apple juice
- 1 tsp. vanilla extract
- 1 pinch of salt
Directions
For the cookies:
- Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.
- In a medium bowl, combine all dry ingredients, set aside.
- In a large bowl, beat butter with brown sugar and white sugar.
- Stir in vegetable oil, applesauce, vanilla extract and apple juice.
- With a spatula, gradually add the dry ingredient mixture to the wet ingredient mixture.
- Divide the dough among the balls on the cookie sheet, making sure to space them out.
- Bake for 12 to 15 minutes and refrigerate.
For the frosting:
- In a large bowl, whisk butter with confectioners’ sugar then stir in remaining ingredients.
- Spread a small amount between two cookies and enjoy!
