One pot of rice with pork and apples

Ingredients

A drizzle of olive oil for cooking
1lb minced pork
1 cup of basmati rice
1 white leek, thinly sliced
1 red pepper, chopped
2 cloves of garlic, chopped
1 ½ cups vegetable broth
½ cup of Allen’s apple juice
1 cup of cream 15%
2 branches of fresh thyme
1 cup of Empire apples, peeled, seeded and diced
Salt and pepper from the mill

GARNISH:
1 cup strong cheddar cheese, grated

Directions
  1. In a saucepan over high heat, heat the oil and then grasp the meat for about 2 minutes.

  2. Stir in remaining ingredients except garnish. Bring to a boil and cover.

  3. Reduce heat and simmer gently for 15 minutes or until rice is cooked.
