Pasta Salad with Apple Vinaigrette
- ½ cup olive oil
- ¼ cup white vinegar or white wine
- 2 tbsp. honey
- 2 tbsp. Allen’s apple juice
- ½ tsp. salt
- ½ teaspoon ground ginger
- 1 clove of garlic
- 4 cups orzo or pasta of your choice
- 2 red apples, diced
- 2 stalks celery, chopped
- 1 cup feta cheese, crumbled
- ½ cup chopped red onion
- 1 can chickpeas

In an airtight container, add all dressing ingredients, mix well.
