Ingredients Salad
  • 4 cups chopped kale
  • 1 cup shredded brussels sprouts*
  • 1 cup quinoa
  • 1 cup apple slices
  • ½ cup red onion, sliced
  • ¼ cup chopped pecan
  • ¼ cup dried cranberries
Dressing
  • 2 tbsp Dijon mustard
  • 1 ½ tbsp Allen’s apple juice
  • 1 tbsp lemon juice
  • 1 tbsp maple syrup
  • ¼ tsp. salt
  • ¼ tsp. pepper
  • ½ cup olive oil
Directions
  1. In a bowl, mix all dressing ingredients and reserve.

  2. In a large bowl, add all ingredients for the salad, Add dressing when ready to serve. Mix everything together. Enjoy.

Chef's tip

For even more flavour, roast the pecan in a skillet until golden. Let it cool before adding to the salad.
