Pomegranate Mint Mojitos

Ingredients

  • 1/2 cup (125 mL) packed fresh mint leaves
  • 3 tbsp (45 mL) lime juice
  • 3 tbsp (45 mL) agave syrup
  • 1 cup (250 mL) ice cubes
  • 1 1/3 cups (325 mL) Allen’s cranberry cocktail
  • 6 oz (175 mL) white rum
  • 1/4 cup (60 mL) pomegranate arils
  • 1 cup (250 mL) sparkling water
  • 4 fresh mint sprigs

Directions

  1. Divide mint leaves, lime juice and agave syrup among 4 tall glasses; muddle with handle of wooden spoon. Top with ice.

  2. Pour in Allen’s cranberry cocktail and rum; divide pomegranate arils among glasses.

  3. Stir to combine; top with sparkling water. Garnish with mint sprigs.
