The nutritional benefits of kale are widely known. Combined here with apple, it makes for a delicious and easy-to-prepare side dish.
Preparation and Cooking Time: 30 minutes
30 ml (2 tbsp) olive oil
½ red onion, finely sliced
1 Spartan apple, peeled, seeded and cut into sections
60 ml (¼ cup) apple juice
1.5 L (6 cups) kale, chopped and main stem removed
Pine nuts, toasted (optional)
1. In a large pan over medium heat, warm olive oil. Sauté onion until tender.
2. Add apple and apple juice, then cook 6 minutes over medium heat, stirring from time to time.
3. Add kale and a little more oil if needed. Cook on medium-high around 6 minutes or until kale turns tender-crisp. Season generously.
4. To serve, sprinkle with toasted pine nuts if using.
