Ingredients

2 ½ cups all-purpose flour
1 cup granulated sugar
1 tsp. baking soda
1 tsp. ground cinnamon
½ teaspoon baking powder
½ teaspoon salt
1/3 cup vegetable oil
2 eggs
1 cup applesauce
½ cup blueberries
¼ diced apple

Directions
  1. Preheat oven to 350F and line a loaf pan.

  2. In a bowl, combine flour, sugar, baking soda, cinnamon, baking powder and salt.

  3. In another bowl, mix oil, eggs and applesauce.

  4. Add wet ingredients to dry ingredients, making sure to mix well. Add apples and blueberries, mixing gently.

  5. Pour mixture into pan and bake for about 60 minutes or until toothpick inserted in center comes out clean.
