Apple Gummies
- 250 ml (1 cup) apple juice
- 35 g (¼ cup) powdered gelatin (about 5 packs)
- 420 g (2 cups) sugar
- 60 ml (¼ cup) lemon juice
- 30 ml (2 tablespoons) icing sugar

In a bowl, pour half of the apple juice (125 ml / ½ cup). Add the gelatin and mix with the fork. Allow to expand for 5 minutes

In a small saucepan, bring to boil the rest of the apple juice (125 ml / ½ cup), sugar and lemon juice. Simmer, stirring for about 2 minutes or until the sugar is completely dissolved. Add the gelatin mixture and continue cooking over low heat, stirring with a whisk until completely dissolved. Foam at this stage if desired.

Pour into the baking dish. Let stand at room temperature for about 8 hours or until the gummies are firm

In a bowl, put the icing sugar. Coat the gummies well, a few at a time. In a sieve, shake the gummies to remove excess icing sugar

Pass the blade of a knife between the gummy and the mold. Cut in large dice by 1.5 cm (¾ in.). To make this step easier, the work surface can be lightly sprinkled with icing sugar.

The gummies are kept for about 2 weeks in an airtight container in a cool, dry place.
